To find out, we measured heat distribution evenness across the full pan surface using an infrared thermometer, tested induction responsiveness and heat-up speed, and compared warranty terms and finish durability on comparable mid-range pieces from both brands. We measured surface temperature variance across the full pan using an infrared thermometer at multiple points, on comparable mid-range triply pieces from both brands.
Stahl — tighter, more consistent heat spread
Stahl's triply construction showed tighter temperature variance across the cooking surface in our measurement, less risk of hot spots scorching food on one side while the other stays undercooked.
Bergner — solid, slightly more edge variance
Bergner's triply pieces performed reasonably well but showed marginally more temperature drop-off toward the edges in our measurement compared to Stahl, a small but measurable difference.
Why aluminum core thickness shows up in real cooking
The aluminum middle layer is what actually spreads heat in triply construction, a thicker core distributes heat more evenly across the full pan surface, not just the center. Stahl's slightly thicker core in our comparable test pieces translated directly into the tighter temperature variance we measured.

We compared induction heat-up speed and responsiveness to temperature changes on comparable triply pieces from both brands on the same induction cooktop.
Stahl — fast, responsive on induction
Stahl's triply base showed strong magnetic responsiveness and fast heat-up time on our induction cooktop, with quick temperature adjustment when the dial was changed mid-cook.
Bergner — comparable, slightly slower adjustment
Bergner's induction performance was strong overall but showed marginally slower responsiveness to mid-cook temperature adjustments compared to Stahl in our timed testing.
